I am looking for some places relatively close that a beginner could do and I found a couple here: http://www.find-off-road-trails.com/new-york-trails.html

Description: The Fields of Dreams Family 4WD Farm is located on 100 acres and offers off road trails rated 3-6 in normal weather conditions. This off road park was designed for small to mid-size stock or slightly modified 4WD vehicles used as daily drivers. The more challenging trails offer by-passes around the most difficult sections. All trails allow two way traffic which doubles your off road experience. There are over 30 hill climbs ranging from 5' to 75' foot height. In addition to mud the park owners have incorporated thousands of the boulders and field stones from their old stone fences into the trails. The water obstacles range from a few inches to 3’ feet in depth depending on the season. The trails are very tight and located in the dense wooded areas of the park. Tire size is limited to a 35". No full-sized trucks or large SUV's are allowed on trails.

I've been to Mettowee. There's maybe a day's worth of trail riding. They are more of a mud park with a hilly wooded rocky area in the back. There's free primitive camping on site. The park is very casual with rules.
